My roommate is on a vegan dessert kick— she’s not vegan, herself, but I think she regards it as an intellectual challenge. The latest is amaretto chocolate tofu mousse: very worth replicating. I have such a soft spot in my heart for vegan desserts that use silken tofu. You mention it to someone who thinks soy is for vegetarian stir-fry and their face drops.
